Biriyani is a very favourite dish and is popular all over the world. There are different types of biriyani. Chettinad Vegetable Biriyani is one of the popular vegetable biriyani that is famous among all the people.
Preparation of this biriyani does not take much time and the ingredients required for this biriyani is easily available in the market.
Basmati rice - 1 1/2 cup
Carrot - 1
Beans - 10
Potato - 1
Cauliflower - small flowerets 1/2 cup or chopped
Green peas - 1/4 cup
Onion - 1 small sliced
Ginger - 1/2 inch piece
Garlic - 5 cloves
Fennel seeds - 1 tsp
Green chilies - 3
dry Red chilies - 3
Fresh mint leaves - a few 10- 15 leaves
Coriander leaves - 1/4 cup
Cinamon - 1 inch pieces -- 2
Cloves - 4
Bay leaves - 2
Fennel seeds - 1/2 tea sp
Coconut milk - 1 cup
Water - 2 cups
Ghee - 1 tab sp
Salt to taste
Tomato puree - 2 tbsp or 1/4 cup chopped tomato
Oil - 1 tbsp
How to prepare Chettinad Vegetable Biriyani Recipe
1. Wash the basmati rice with water. Soak the basmati rice in water for about 15 to 20 minutes.
2. To prepare masala add the Chilies,ginger, garlic, fennel seeds, mint and coriander leaves in a mixie or blender and grind them into a fine paste.
3. Take a pan and pour some ghee and heat it. Add the basmati rice to the ghee and fry the rice for few minutes. Remove the rice from pan and keep it aside.
4. Heat oil in a pan and add cinamon, clove, fennel seeds, bay leaves to it. Add sliced onion to the pan and fry till onion turns light brown color.
5. Chop all the vegetables and add it to the pan and fry well. Add the masala paste from the mixie and fry well. You can add tomato puree and saute well.
6. Next add coconut milk, water and the required amount of salt.
7. Add the basmati rice when water begins to boil.
8. Mix all the ingredients and cook in a pressure cooker till you get 2 whistles.
9. Hot Chettinad Vegetable Biriyani is ready to serve
Chettinad Vegetable Biriyani will go good with onion pachadi and pudhina chutney.
